{Ingredients}
1 tablespoon light olive oil
1 medium red onion, finely diced
2 cloves of garlic, finely chopped
½ teaspoon dried oregano
½ teaspoon cumin
½ tsp onion powder
½ tsp garlic powder
1 pinch cayenne powder
2 pkgs of chicken goya seasoning
½ teaspoon adobe
2 carrots, cut into 1/4-inch-rounds
1 pkg mild chorizo
1 pound of lean pork cubed
8 ounces cut green beans, frozen or fresh
1 can of diced tomatoes
2 cans of tomato sauce
3 cups of chicken stock
3 cups of water
1 can of chickpeas
½ poblano chilies, minced
1 teaspoon of ancho chilies minced
¼ cup Garlic Chile Sauce or Hernadez Chile de arbol salsa
1 avocado, peeled and sliced
½ cup cilantro minced ¼ leaves, for garnish
6 wedges limes
{Directions}
– Warm the oil in a soup pot, add onion, garlic, oregano, adobe, and cook over medium-low heat until the onion softens. Add chorizo- cook for 5-7 min until done. Add diced tomatoes, tomato sauce, garlic chile sauce chickpeas(undrained),carro
– In a bowl mixed cubed pork with goya chicken seasoning pkgs, onion powder, garlic powder & cumin. add ¼ cup of flour to meat & stir.
– In a skillet, heat 3 tbsp of coconut oil add pieces of floured pork, cook & brown for 10-12 min, drain on paper towel
– Add cooked cubed pork & green beans to pot simmer for 30 min.
